(2) [heat green tea]∶加工綠茶的一道工序,把嫩葉加高溫烤軟,破壞其中的酵素,防止發(fā)酵並使茶葉保持原有綠色,以便進(jìn)一步加工
古代製作竹簡(jiǎn)，必先用火烤炙，至其冒出水分，刮去青皮，始方便書(shū)寫(xiě)並防止蟲(chóng)蠹，此一製作程序，稱(chēng)為「殺青」。漢．劉向《別錄》：「殺青者，直治竹作簡(jiǎn)書(shū)之耳。新竹有汗，善朽蠹；凡作簡(jiǎn)者，皆於火上炙乾之。陳、楚間謂之汗。汗者，亦去其汁也?！?/span>也稱(chēng)為「汗簡(jiǎn)」、「汗青」。
泛指書(shū)籍定稿或著(zhù)作完成。漢．劉向〈戰國策書(shū)錄〉：「其事繼春秋以後，訖楚、漢之起，二百四十五年間之事，皆定以殺青，書(shū)可繕寫(xiě)?！?/span>

綠茶加工製作時(shí)，將摘下的嫩葉加溫，防止茶葉中的酵素發(fā)酵的過(guò)程，稱(chēng)為「殺青」 。
